Braised Loach Fish in Clay Pot

This Vietnamese delicacy is known for its intricate and time-consuming cooking process, contributing to its exceptional and distinctive flavor profile. Featuring freshwater fish as the star ingredient, this dish incorporates a harmonious blend of herbs and spices, making it not only a culinary delight but also a rich source of diverse nutrients.
Ingredients:
- Loach fish
- Galangal
- Galangal juice
- Chili
- Laksa leaves
- Fish sauce
- Salt
- Caramel
- Pepper
Instructions:
- Clean the loach fish with salt, lemon juice, and chili.
- Marinate the fish with salt, fish sauce, chili, and galangal juice for 15 minutes.
- Slice the galangal and put it along with the laksa leaves in the clay pot.
- Add the marinated fish above the galangal layers and add some sliced chili on top.
- Spice up with a bit of caramel and galangal juice.
- Put the pot on the charcoal stove and steam/simmer for 8 hours. The finished dished is very soft and full of flavor, even the fish bones can be eaten. Serve with rice and soup and enjoy!
